another lb down... could this really be working??


Unbreaded (wheat-free) Eggplant Chicken Parm! Delish!
i prepared all the eggplant pieces the other day, baked in the oven with olive-oil...  and put them in the fridge for easy meals...
I took one out last night and added a few pieces of baked chicken (that i also always keep on hand)
Put some sauce and cheese on top.. and put it in the toaster oven...
IT WAS ONE OF THE BEST MOST FILLING DINNERS I HAVE HAD IN AWHILE!!

Tipped the scale at 127.4 this morning.... could this really be working??
Im not sure still but the fact that i have not changed ANYTHING else in my life-- im thinking maybe it is.. because i have been stuck at 130 for about a month and it was only going up from there... i havent really see the scales go DOWN this much in about 6 or so months...
